- 4 medium sweet potatoes
- 1 cup grated Parmesan cheese
- ½ cup grated Asiago or Manchego cheese
- Kosher salt and black pepper, to taste
- 2 cups Panko bread crumbs
- 1 tsp paprika
- ½ tsp cayenne pepper
- ½ tsp onion powder
- ½ tsp garlic powder
- Extra virgin olive oil, for brushing
- 6 Tbsp salted butter
- 2 Tbsp fresh thyme leaves
- 2 tsp chopped fresh sage
- 1 pinch chili flakes (optional, to taste)
Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Peel the sweet potatoes and slice them into ½-inch thick rounds.
- In a small bowl, combine Parmesan, Asiago (or Manchego), Panko, paprika, cayenne, onion powder, garlic powder, salt, and pepper.
- Brush both sides of each sweet potato round with olive oil, then press them firmly into the cheese and breadcrumb mixture to coat evenly.
- Arrange the coated rounds on the prepared baking sheet in a single layer.
- In a small saucepan, melt butter over low heat. Stir in fresh thyme, chopped sage, and chili flakes (if using).
- Brush the herb butter generously over the tops of the sweet potato bites.
- Bake for 20–25 minutes, flipping halfway through, until golden brown and crispy on the edges.
- Remove from oven and serve warm. Enjoy!

- Use Asiago or Manchego cheese for a sharper flavor, or swap for another hard cheese you love.
- Adjust cayenne and chili flakes to control the heat level.
