  • 4 medium sweet potatoes
  • 1 cup grated Parmesan cheese
  • ½ cup grated Asiago or Manchego cheese
  • Kosher salt and black pepper, to taste
  • 2 cups Panko bread crumbs
  • 1 tsp paprika
  • ½ tsp cayenne pepper
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • Extra virgin olive oil, for brushing
  • 6 Tbsp salted butter
  • 2 Tbsp fresh thyme leaves
  • 2 tsp chopped fresh sage
  • 1 pinch chili flakes (optional, to taste)

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Peel the sweet potatoes and slice them into ½-inch thick rounds.
  3. In a small bowl, combine Parmesan, Asiago (or Manchego), Panko, paprika, cayenne, onion powder, garlic powder, salt, and pepper.
  4. Brush both sides of each sweet potato round with olive oil, then press them firmly into the cheese and breadcrumb mixture to coat evenly.
  5. Arrange the coated rounds on the prepared baking sheet in a single layer.
  6. In a small saucepan, melt butter over low heat. Stir in fresh thyme, chopped sage, and chili flakes (if using).
  7. Brush the herb butter generously over the tops of the sweet potato bites.
  8. Bake for 20–25 minutes, flipping halfway through, until golden brown and crispy on the edges.
  9. Remove from oven and serve warm. Enjoy!

  • Use Asiago or Manchego cheese for a sharper flavor, or swap for another hard cheese you love.
