Description

Golden, crispy-edged cauliflower with a hint of curry and maple—perfectly tender inside! Ready in 30 minutes, this easy side dish is vegan, gluten-free, and packed with flavor. Great for weeknights or as a standout veggie side.


Ingredients

Scale
    1. 1 large head cauliflower, cut into florets

    2. 23 tbsp avocado oil, divided

    3. 1 tsp sea salt

    4. 1 tbsp curry powder

    5. ½ tsp maple syrup (optional)

Optional Garnishes:

    • Fresh cilantro

    • Toasted almonds

    • Tahini drizzle


Instructions

  • Prep: Preheat oven to 450°F (232°C).

  • Season: Toss cauliflower with 1 tbsp oil, salt, curry powder, and maple syrup.

  • Sear: Heat remaining oil in an oven-safe skillet over high heat. Add cauliflower and sear for 5 minutes until golden.

  • Roast: Transfer skillet to the oven. Roast for 10–15 minutes, stirring every 5 minutes, until crispy.

 

  • Serve: Garnish with cilantro, almonds, or tahini.


Notes

  • Adjust maple syrup to taste for a sweeter dish.

  • You can also roast the cauliflower on a sheet pan if you prefer not to use a skillet.

 

  • For extra flavor, try adding a pinch of smoked paprika.
