    1. 3 large russet potatoes, cut into fries
    2. 3 tablespoons vegetable oil

For the Cajun Seasoning:

    1. 1 teaspoon paprika
    2. ½ teaspoon garlic powder
    3. ½ teaspoon onion powder
    4. ½ teaspoon cayenne pepper
    5. ½ teaspoon dried oregano
    6. ½ teaspoon dried thyme
    7. ½ teaspoon black pepper
    8. ½ teaspoon salt
    9. ¼ teaspoon sugar (optional, balances flavors)

Instructions

  • Cut potatoes into thin fries and soak them in cold water for 30 minutes (this removes starch for crispier fries). Drain and pat dry with a clean towel.
  • Preheat oven to 425°F. Toss the fries with vegetable oil and the Cajun seasoning mix.
  • Spread fries on a baking sheet in a single layer (no overlapping). Bake for 25-30 minutes, flipping halfway, until crispy and golden brown.
  • Sprinkle with extra Cajun seasoning if desired. Serve hot with ranch, spicy mayo, or cheese sauce.
