Ingredients
For the Wings:
1 pound chicken wing portions
1 tablespoon olive oil
For the Dry Rub:
1 tablespoon brown sugar
1 teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon ground mustard
½ teaspoon paprika
½ teaspoon salt
¼ teaspoon chili powder
¼ teaspoon red pepper flakes (optional)
Instructions
Preheat oven to 400°F (200°C). Place a wire baking rack on a foil-lined rimmed sheet pan.
Pat chicken wings dry with paper towels to help them crisp up.
In a large bowl, toss the wings with olive oil until evenly coated.
In a small bowl, mix brown sugar, garlic powder, onion powder, ground mustard, paprika, salt, chili powder, and red pepper flakes.
Sprinkle the dry rub over the wings and toss until fully coated.
Arrange wings on the rack, skin side up, spaced apart.
Bake for 20 minutes, then flip and bake for another 15 minutes until golden and crispy.
Serve hot with ranch or blue cheese dressing.
Notes
Patting the wings dry is key to getting crispy skin.
You can double the dry rub to coat more wings or add extra spice with cayenne.
