Description

A refreshing and nutritious salad combining the crispness of cucumber, the sweetness of apple, and the richness of boiled eggs, perfect for your Noche Buena celebration or any festive meal!


Ingredients

  1. For the Salad:

    • 1 Cucumber

    • 4 Eggs (boiled)

    • 1 Apple

    • 2 Tomatoes

    • 1 small Onion

    For the Dressing:

    1. 1/4 cup Mayonnaise

    2. Juice of 1 Lemon

    3. Salt and Pepper to taste


Instructions

  • Peel the cucumber and cut it into thin slices.

  • Peel the boiled eggs and chop them into small pieces.

  • Core and chop the apple into bite-sized pieces.

  • Dice the tomatoes and onions.

  • In a large mixing bowl, combine all the salad ingredients (cucumber, eggs, apple, tomatoes, and onions).

  • In a small bowl, whisk together the mayonnaise, lemon juice, salt, and pepper to make the dressing.

  • Pour the dressing over the salad and gently toss everything together until evenly coated.

 

  • Chill in the fridge for 10-15 minutes before serving.


Notes

  • You can add herbs like parsley or dill for extra flavor.

  • Adjust the dressing according to your taste, adding more mayo for a creamier salad or more lemon for tanginess.

 

  • Serve immediately or refrigerate for a few hours before serving to let the flavors meld together.
