- 2 large boneless, skinless chicken breasts, halved horizontally into 4 thin steaks
- 1 tsp sweet paprika
- 1 tsp sea salt flakes
- 1 tsp cracked black pepper
- 1 tbsp olive oil
- 200 g (7 oz) streaky bacon, cut into wide strips
- 1 tbsp unsalted butter
- 1 small onion, finely diced
- 1 tbsp finely chopped garlic
- 400 g (14 oz) fettuccine or pasta of your choice
- 200 g (7 oz) Swiss brown mushrooms (or white/button), sliced
- 300 ml (10½ fl oz) thickened (heavy) cream
- ½ tsp chicken stock powder (bouillon)
- 1 cup (100 g) freshly grated parmesan, plus extra to serve
- 1 tbsp finely chopped flat-leaf parsley, to serve
Instructions
- Season chicken with paprika, salt, and pepper. Heat olive oil in a large skillet over medium-high heat. Sear chicken on both sides until golden and cooked through. Remove from pan and slice.
- In the same pan, cook bacon until crisp. Add butter, onion, and garlic. Sauté until softened and fragrant.
- Meanwhile, cook pasta in salted boiling water until al dente. Drain, reserving a little pasta water.
- Add mushrooms to the skillet and cook until golden and tender. Stir in cream and chicken stock powder. Simmer for a few minutes until slightly thickened.
- Return sliced chicken to the pan, add cooked pasta, and toss to coat. Stir in parmesan, adding a splash of pasta water if needed to loosen the sauce.
- Serve topped with extra parmesan and chopped parsley.
Notes
- For a smoky twist, use pancetta instead of bacon.
- You can swap Swiss brown mushrooms with portobello or cremini mushrooms.
- Use freshly grated parmesan for the best flavor and creaminess.
- If you prefer a thicker sauce, simmer a few minutes longer before adding the pasta.
- Add a pinch of chili flakes for subtle heat.
