  • 2 large boneless, skinless chicken breasts, halved horizontally into 4 thin steaks
  • 1 tsp sweet paprika
  • 1 tsp sea salt flakes
  • 1 tsp cracked black pepper
  • 1 tbsp olive oil
  • 200 g (7 oz) streaky bacon, cut into wide strips
  • 1 tbsp unsalted butter
  • 1 small onion, finely diced
  • 1 tbsp finely chopped garlic
  • 400 g (14 oz) fettuccine or pasta of your choice
  • 200 g (7 oz) Swiss brown mushrooms (or white/button), sliced
  • 300 ml (10½ fl oz) thickened (heavy) cream
  • ½ tsp chicken stock powder (bouillon)
  • 1 cup (100 g) freshly grated parmesan, plus extra to serve
  • 1 tbsp finely chopped flat-leaf parsley, to serve

Instructions

  1. Season chicken with paprika, salt, and pepper. Heat olive oil in a large skillet over medium-high heat. Sear chicken on both sides until golden and cooked through. Remove from pan and slice.
  2. In the same pan, cook bacon until crisp. Add butter, onion, and garlic. Sauté until softened and fragrant.
  3. Meanwhile, cook pasta in salted boiling water until al dente. Drain, reserving a little pasta water.
  4. Add mushrooms to the skillet and cook until golden and tender. Stir in cream and chicken stock powder. Simmer for a few minutes until slightly thickened.
  5. Return sliced chicken to the pan, add cooked pasta, and toss to coat. Stir in parmesan, adding a splash of pasta water if needed to loosen the sauce.
  6. Serve topped with extra parmesan and chopped parsley.

Notes

  • For a smoky twist, use pancetta instead of bacon.
  • You can swap Swiss brown mushrooms with portobello or cremini mushrooms.
  • Use freshly grated parmesan for the best flavor and creaminess.
  • If you prefer a thicker sauce, simmer a few minutes longer before adding the pasta.
  • Add a pinch of chili flakes for subtle heat.
