  1. 15 oz (400g) cheese tortellini, refrigerated
  2. 1 Tbsp olive oil
  3. 1/3 cup milk
  4. 2/3 cup sour cream
  5. 1/2 cup mozzarella, grated
  6. 1 1/2 cups baby spinach, fresh
  7. 1 small tomato, chopped
  8. 1 garlic clove, minced
  9. 2 scallions, chopped
  10. 2 Tbsp parsley or basil, chopped
  11. Parmesan cheese, for topping
  12. Black pepper, freshly ground
  13. Salt, to taste

Instructions

  • Cook the Tortellini: Cook the tortellini according to the package instructions. Alternatively, to make it a one-pan meal, heat 1 Tbsp olive oil in a large, deep pan over medium-high heat. Add the tortellini and stir for 30 seconds to 1 minute until golden brown.
  • Add the Milk: Reduce the heat and add the milk, stirring for 1 minute.
  • Add the Sour Cream: Add the sour cream and stir continuously for 2–3 minutes until the sauce thickens.
  • Add Vegetables & Season: Stir in the garlic, scallions, tomato, spinach, and parsley. Season with black pepper.
  • Add the Cheese: Add the grated mozzarella cheese, stirring until the sauce thickens further. Taste and adjust seasoning with salt and pepper if needed.

 

  • Serve: Remove from heat, serve immediately, and top with Parmesan cheese for extra flavor.

Notes

  • You can use whole wheat or gluten-free tortellini for a healthier or dietary-friendly version.
  • For extra richness, add a splash of heavy cream in place of some of the milk.

 

  • If you prefer a spicier dish, add red pepper flakes or a dash of hot sauce.
