This Creamy Sausage Tortellini Soup is a flavor-packed slow cooker meal that’s perfect for busy nights! Made with savory Italian sausage, cheesy tortellini, tomatoes, and creamy broth, it’s a family-approved comfort food that even picky eaters will love

  1. 1 lb Jimmy Dean Italian Pork Sausage
  2. 4 cups vegetable broth (32oz container)
  3. 2 (15oz) cans Italian diced tomatoes
  4. 1 (8oz) block cream cheese (cubed)
  5. 1 (20oz) bag frozen cheese tortellini (or refrigerated)
  6. 3+ cups fresh spinach

Instructions

  • Brown the Sausage: In a medium pan, brown the sausage over medium heat until no longer pink. Drain excess grease.
  • Combine Ingredients in Slow Cooker: Add the sausage, vegetable broth, diced tomatoes, and cubed cream cheese into your slow cooker. Stir well.
  • Cook: Cook on LOW for 4 hours or until the cream cheese melts completely.
  • Add Tortellini and Spinach: Stir in the tortellini and fresh spinach.
  • Finish Cooking: Cook on LOW for another 30 minutes, or until the tortellini is tender.

 

  • Serve: Serve hot and enjoy!
