  3. In a separate bowl, whisk together the egg, sugar, vanilla extract, almond extract, and remaining ½ cup milk.
  4. Scoop a small amount of the hot rice mixture into the egg mixture to temper it, stirring constantly. Then slowly pour the tempered mixture back into the saucepan while stirring.
  5. Continue cooking over low heat, stirring constantly, for 2–3 minutes until the pudding thickens and becomes rich and creamy.
  6. Serve warm or chill for a few hours before serving. Top with a dusting of cinnamon if desired.

Notes

  • Arborio rice is key for the perfect creamy texture—don’t substitute with long grain rice.
  • Use freshly squeezed orange juice and zest for the best flavor—bottled juice won’t cut it here.
