- In a separate bowl, whisk together the egg, sugar, vanilla extract, almond extract, and remaining ½ cup milk.
- Scoop a small amount of the hot rice mixture into the egg mixture to temper it, stirring constantly. Then slowly pour the tempered mixture back into the saucepan while stirring.
- Continue cooking over low heat, stirring constantly, for 2–3 minutes until the pudding thickens and becomes rich and creamy.
- Serve warm or chill for a few hours before serving. Top with a dusting of cinnamon if desired.

- Arborio rice is key for the perfect creamy texture—don’t substitute with long grain rice.
