A classic, comforting dessert that’s rich, creamy, and perfectly spiced with cinnamon and vanilla. This easy homemade rice pudding is a perfect dessert for chilly nights or as a sweet treat for any occasion!

Ingredients

    1. 1/2 cup short-grain rice (such as Arborio or Calrose)
    2. 4 cups whole milk
    3. 1/2 cup granulated sugar
    4. 1/4 teaspoon salt
    5. 1 teaspoon vanilla extract
    6. 1/2 teaspoon ground cinnamon

    1. Ground cinnamon
    2. Nutmeg
    3. Raisins
    4. Whipped cream

Instructions

  • Combine Rice and Milk:
    In a medium saucepan, combine the rice and milk.

  • Simmer and Stir:
    Bring the mixture to a simmer over medium heat, stirring occasionally to prevent sticking.

  • Add Sugar and Salt:
    Reduce the heat to low. Stir in the sugar and salt.

  • Simmer to Creamy Perfection:
    Continue to simmer, uncovered, for 1.5-2 hours, or until the rice is very tender and the mixture has thickened into a creamy pudding. Stir frequently during the last 30 minutes of cooking to prevent sticking and ensure even cooking.

  • Add Vanilla and Cinnamon:
    Remove from heat and stir in the vanilla extract and ground cinnamon.

  • Cool and Serve:
    Let the creamy rice pudding cool slightly before serving. Top with optional toppings like ground cinnamon, raisins, or whipped cream.

  • If you like your pudding thicker, continue simmering until the desired consistency is reached.
