Description

This Creamy Parmesan Italian Sausage Soup is a hearty and flavorful dish that combines savory Italian sausage, creamy Parmesan, and wholesome kale in a rich, comforting broth. Perfect for cozy dinners!


Ingredients

  1. 1 lb Italian sausage

  2. 1 onion, diced

  3. 3 cloves garlic, minced

  4. 4 cups chicken broth

  5. 1 can (14.5 oz) diced tomatoes

  6. 1 cup heavy cream

  7. 1 cup grated Parmesan cheese

  8. 2 cups chopped kale

  9. 1 tsp dried basil

  10. 1 tsp dried oregano

  11. Salt and pepper to taste


Instructions

  • In a large pot, cook the Italian sausage over medium heat until browned. Remove sausage and set aside, leaving the drippings in the pot.

  • Add the diced onion to the pot and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute.

  • Pour in the chicken broth and diced tomatoes. Stir in the basil, oregano, salt, and pepper.

  • Return the sausage to the pot and bring the mixture to a boil. Reduce heat and simmer for 15 minutes.

  • Stir in the heavy cream and grated Parmesan cheese until well combined.

  • Add the chopped kale and cook until wilted, about 5 minutes. Adjust seasoning as needed.

 

  • Serve hot with extra Parmesan cheese on top, if desired.


Notes

  • You can substitute spinach for the kale if preferred.

  • For a thicker soup, reduce the amount of chicken broth or add more cream.

 

  • If you like a spicier kick, add some red pepper flakes when cooking the sausage.
