    • 4 bone-in, skin-on chicken thighs

    • 1/2 teaspoon black pepper

    • 4 cloves garlic, minced
    • 1 cup mushrooms, sliced
    • 1 cup heavy cream
    • 1/2 cup chicken broth
    • 1/2 teaspoon dried thyme
    • 1/2 teaspoon Italian seasoning
    • 1/4 teaspoon red pepper flakes (optional)
    • 1/2 cup grated Parmesan cheese

    For the gnocchi:

    1. 12 ounces potato gnocchi
    2. 2 cups baby spinachw

Instructions

  • Cook the chicken:

    • Season the chicken thighs with salt, black pepper, and garlic powder.
    • Heat olive oil in a large skillet over medium-high heat.
    • Sear chicken skin-side down until golden brown, about 5 minutes.
    • Flip and cook for another 5 minutes. Remove and set aside.
  • Prepare the sauce:

    • Reduce heat to medium and melt butter in the skillet.
    • Sauté garlic and mushrooms for 2 minutes until fragrant.
    • Pour in heavy cream and chicken broth. Stir in thyme, Italian seasoning, and red pepper flakes.
    • Bring to a simmer, then add Parmesan cheese.
  • Cook the gnocchi:

    • Stir in gnocchi and let them cook in the sauce for about 3 minutes.
  • Combine everything:

    • Add baby spinach and stir until wilted.
    • Nestle chicken thighs back into the skillet and simmer for 10 minutes until chicken is fully cooked.
  • Serve:

    • Garnish with fresh thyme and serve hot.

Notes

  • Feel free to add more red pepper flakes for extra heat or other vegetables like zucchini for variety.
  • You can substitute the chicken thighs for chicken breasts if preferred. Just be sure to adjust the cooking time.
  • If you prefer a lighter version, you can substitute the heavy cream with half-and-half or milk, but the sauce may not be as thick.
