Ingredients
- 1 cup heavy cream
- 4 cloves garlic, minced
- ¼ cup unsalted butter
- 2 chicken breasts, diced
- Salt and pepper to taste
- 8 oz rotini pasta
- ½ cup grated Parmesan cheese
- Fresh parsley, chopped (for garnish)
Instructions
-
Cook the Chicken:
In a skillet, melt butter over medium heat. Add minced garlic and cook for 1-2 minutes until fragrant.
Season the diced chicken breasts with salt and pepper, then add them to the skillet. Cook the chicken for 6-8 minutes, or until browned and fully cooked through. -
Cook the Pasta:
In a separate pot, bring water to a boil and cook the rotini pasta according to the package instructions. Once done, reserve a cup of pasta water before draining the pasta. -
Make the Sauce:
Pour the heavy cream into the skillet with the chicken and garlic. Let it simmer for 3-5 minutes, allowing the cream to thicken slightly.
Stir in the grated Parmesan cheese and cook until the cheese has melted and the sauce is creamy. -
Combine:
Add the cooked rotini to the skillet with the creamy chicken sauce. Toss to coat the pasta, adding reserved pasta water a little at a time if the sauce is too thick. -
Serve:
Serve the creamy garlic butter chicken and rotini hot, garnished with fresh chopped parsley for a pop of color and flavor.
Notes
- You can substitute the rotini with any other pasta of your choice, like penne or fusilli.
- For a bit of heat, add a pinch of red pepper flakes when cooking the garlic.
- This dish pairs well with a simple side salad or garlic bread.
