  2. 4 cloves garlic, minced
  3. ¼ cup unsalted butter
  4. 2 chicken breasts, diced
  5. Salt and pepper to taste
  6. 8 oz rotini pasta
  7. ½ cup grated Parmesan cheese
  8. Fresh parsley, chopped (for garnish)

Instructions

  • Cook the Chicken:
    In a skillet, melt butter over medium heat. Add minced garlic and cook for 1-2 minutes until fragrant.
    Season the diced chicken breasts with salt and pepper, then add them to the skillet. Cook the chicken for 6-8 minutes, or until browned and fully cooked through.

  • Cook the Pasta:
    In a separate pot, bring water to a boil and cook the rotini pasta according to the package instructions. Once done, reserve a cup of pasta water before draining the pasta.

  • Make the Sauce:
    Pour the heavy cream into the skillet with the chicken and garlic. Let it simmer for 3-5 minutes, allowing the cream to thicken slightly.
    Stir in the grated Parmesan cheese and cook until the cheese has melted and the sauce is creamy.

  • Combine:
    Add the cooked rotini to the skillet with the creamy chicken sauce. Toss to coat the pasta, adding reserved pasta water a little at a time if the sauce is too thick.

  • Serve:
    Serve the creamy garlic butter chicken and rotini hot, garnished with fresh chopped parsley for a pop of color and flavor.

  • You can substitute the rotini with any other pasta of your choice, like penne or fusilli.
