Original Ditalini Pasta

  • 3 Tbsp extra virgin olive oil
  • 4 cloves garlic, minced
  • 8 oz ditalini pasta (about 2 cups)
  • 3 cups vegetable broth (or more, if needed)
  • ¼ cup cream or milk
  • 4 Tbsp salted butter
  • ½ cup Parmesan cheese
  • Salt, to taste
  • Black pepper, to taste
  • ⅓ cup chopped parsley (optional, for garnish)

Chili Crisp Version

  • 4 Tbsp chili crisp
  • ¼ cup Parmesan or cheddar cheese
  • 1 can chickpeas, drained and rinsed

Instructions

  1. Cook garlic: In a large skillet or saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant but not browned, about 1–2 minutes.
  2. Add pasta and broth: Stir in ditalini pasta and vegetable broth. Bring to a simmer, cover loosely, and cook for 10–12 minutes, stirring occasionally, until pasta is tender and most of the liquid is absorbed. Add more broth if needed.
  3. Make it creamy: Lower the heat and stir in cream or milk, butter, and Parmesan cheese. Season with salt and black pepper to taste. Cook for an additional 2–3 minutes until creamy and well combined.
  4. Optional chili crisp version: Stir in chili crisp, chickpeas, and extra cheese. Cook until heated through, about 2 minutes.
  5. Serve: Garnish with chopped parsley if using. Serve warm straight from the pan!

Notes

  • Ditalini can be swapped with other small pasta shapes like orzo or elbow macaroni.
  • For a vegan version, use plant-based butter, dairy-free milk, and nutritional yeast instead of cheese.
  • The chili crisp version is delicious served cold or at room temperature too!
