Description

  • 4 oz cream cheese, softened (or plant-based alternative)
  • 2 tbsp mayonnaise (or Greek yogurt)
  • 1 tbsp fresh dill, chopped (or ½ tsp dried)
  • 1 tsp lemon juice
  • 1 small garlic clove, minced (optional)
  • 8 slices soft white or whole wheat sandwich bread, crusts removed
  • Black pepper, to taste

Instructions

  1. Prep cucumbers: Place sliced cucumbers in a colander, sprinkle with salt, and let drain for 10–15 minutes. Pat dry with paper towels.
  2. Make spread: In a bowl, mix cream cheese, mayo, dill, lemon juice, garlic (if using), and black pepper until smooth and creamy.
  3. Assemble sandwiches: Spread the cream cheese mixture onto each bread slice. Layer cucumber slices on half the slices, then top with remaining bread.
  4. Trim & cut: Gently press sandwiches together, trim off crusts if desired, and cut each into quarters—either squares or elegant triangles.
  5. Serve: Arrange on a platter and chill for 10–15 minutes before serving for best flavor and texture.
