- 1 large English cucumber, thinly sliced
- ½ tsp salt
- 4 oz cream cheese, softened (or plant-based alternative)
- 2 tbsp mayonnaise (or Greek yogurt)
- 1 tbsp fresh dill, chopped (or ½ tsp dried)
- 1 tsp lemon juice
- 1 small garlic clove, minced (optional)
- 8 slices soft white or whole wheat sandwich bread, crusts removed
- Black pepper, to taste
Instructions
- Prep cucumbers: Place sliced cucumbers in a colander, sprinkle with salt, and let drain for 10–15 minutes. Pat dry with paper towels.
- Make spread: In a bowl, mix cream cheese, mayo, dill, lemon juice, garlic (if using), and black pepper until smooth and creamy.
- Assemble sandwiches: Spread the cream cheese mixture onto each bread slice. Layer cucumber slices on half the slices, then top with remaining bread.
- Trim & cut: Gently press sandwiches together, trim off crusts if desired, and cut each into quarters—either squares or elegant triangles.
- Serve: Arrange on a platter and chill for 10–15 minutes before serving for best flavor and texture.

- For a lighter alternative, substitute Greek yogurt for mayonnaise.
- For added flavor, try adding a few fresh herbs like chives or tarragon to the spread.
