- 4 cups broccoli florets, chopped
- 1 large Honeycrisp apple, diced
- 1/2 cup dried cranberries
- 1/2 cup chopped pecans or walnuts
- 1/4 cup red onion, finely diced
- 1/2 cup shredded sharp cheddar cheese (optional)
- 1/2 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 1 tablespoon honey
- Salt and pepper, to taste
Instructions
- In a large mixing bowl, combine the chopped broccoli, diced apple, dried cranberries, pecans or walnuts, red onion, and shredded cheddar if using.
- In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, honey, salt, and pepper until smooth.
- Pour the dressing over the salad ingredients and toss until evenly coated.
- Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
- Give the salad a final toss before serving. Serve chilled.
Notes
- Substitute Greek yogurt for mayonnaise for a lighter option.
- Use any crisp, sweet apple if Honeycrisp is not available.
