Description

A vibrant and refreshing broccoli apple slaw tossed in a creamy honey-cider dressing, with crunchy nuts, sweet cranberries, and optional sharp cheddar for added richness.


Ingredients

  • 4 cups broccoli florets, chopped
  • 1 large Honeycrisp apple, diced
  • 1/2 cup dried cranberries
  • 1/2 cup chopped pecans or walnuts
  • 1/4 cup red onion, finely diced
  • 1/2 cup shredded sharp cheddar cheese (optional)
  • 1/2 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • Salt and pepper, to taste

Instructions

  1. In a large mixing bowl, combine the chopped broccoli, diced apple, dried cranberries, pecans or walnuts, red onion, and shredded cheddar if using.
  2. In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, honey, salt, and pepper until smooth.
  3. Pour the dressing over the salad ingredients and toss until evenly coated.
  4. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
  5. Give the salad a final toss before serving. Serve chilled.
