Description

Soft, chewy cookie bars inspired by classic lunch lady peanut butter treats, topped with a rich and creamy peanut butter frosting.


Ingredients

  • 2 cups sugar
  • 1 ½ cups peanut butter
  • 3 sticks butter (1 ½ cups)
  • 1 tsp baking soda
  • 1 tsp vanilla

  • 4 cups powdered sugar

  • ½ cup milk

Instructions

  1. Preheat oven to 400°F (200°C). Grease a cookie sheet.
  2. In a bowl, mix flour, sugar, baking soda, and salt. Set aside.
  3. In another bowl, whisk together milk, vanilla, and eggs. Set aside.
  4. Melt butter and 1 ½ cups of peanut butter in a saucepan over low heat until smooth.
  5. Combine melted mixture with the dry ingredients, then stir in the egg mixture until fully combined.
  6. Spread the batter evenly onto the prepared cookie sheet.
  7. Bake for 20 minutes or until golden and set. Let cool completely.
  8. For the frosting: melt remaining butter and peanut butter, then mix in milk and powdered sugar until smooth.
  9. Spread frosting over the cooled bars evenly.
  10. Allow frosting to set before slicing and serving.
