Soft, chewy cookie bars inspired by classic lunch lady peanut butter treats, topped with a rich and creamy peanut butter frosting.

- 2 cups flour
- 2 cups sugar
- 1 ½ cups peanut butter
- 3 sticks butter (1 ½ cups)
- 1 tsp baking soda
- 1 tsp vanilla
- 1 tsp salt
- 4 cups powdered sugar
- 2 eggs
- ½ cup milk
Instructions
- Preheat oven to 400°F (200°C). Grease a cookie sheet.
- In a bowl, mix flour, sugar, baking soda, and salt. Set aside.
- In another bowl, whisk together milk, vanilla, and eggs. Set aside.
- Melt butter and 1 ½ cups of peanut butter in a saucepan over low heat until smooth.
- Combine melted mixture with the dry ingredients, then stir in the egg mixture until fully combined.
- Spread the batter evenly onto the prepared cookie sheet.
- Bake for 20 minutes or until golden and set. Let cool completely.
- For the frosting: melt remaining butter and peanut butter, then mix in milk and powdered sugar until smooth.
- Spread frosting over the cooled bars evenly.
- Allow frosting to set before slicing and serving.

- Ensure bars are completely cooled before frosting to prevent melting.
- Use creamy peanut butter for a smoother texture or chunky for added crunch.
- Store in an airtight container for up to 5 days.
