- 2 tbsp olive oil
- 1 tsp kosher salt
- 2 tbsp butter
- 3 cloves garlic, minced
- 1 tsp dried oregano
- 2 cups heavy cream
- 2 (14.5 oz) cans diced tomatoes (with onion and garlic)
- 3–4 tbsp tomato paste (adjust to taste)
Instructions
- In a large pot over medium heat, heat the olive oil. Add the chopped onion and kosher salt, stirring occasionally, and cook until lightly caramelized (about 10-15 minutes).
- Stir in the butter, garlic, and oregano, cooking for another minute until fragrant.
- Slowly pour in the heavy cream, stirring continuously.
- Add the diced tomatoes and tomato paste. Stir well and let simmer on medium heat for 15-20 minutes, until the soup thickens slightly and flavors meld.
- Taste and adjust seasoning if needed. Serve warm with crusty bread or grilled cheese for the ultimate comfort meal.
- Optional: Blend part of the soup for a smoother texture while keeping some tomato chunks intact.
