  9. 34 tbsp tomato paste (adjust to taste)

Instructions

  • In a large pot over medium heat, heat the olive oil. Add the chopped onion and kosher salt, stirring occasionally, and cook until lightly caramelized (about 10-15 minutes).
  • Stir in the butter, garlic, and oregano, cooking for another minute until fragrant.
  • Slowly pour in the heavy cream, stirring continuously.
  • Add the diced tomatoes and tomato paste. Stir well and let simmer on medium heat for 15-20 minutes, until the soup thickens slightly and flavors meld.
