- 3 cups cooked chicken (boneless skinless breast/thighs or rotisserie)
- 1 cup heavy whipping cream
- ¾ cup frozen peas
Thickener – Beurre Manié
- 1 Tbsp butter, softened
- 1 Tbsp all-purpose flour
Dumplings
- 2 cups all-purpose flour
- 1 Tbsp baking powder
- 1 tsp kosher salt
- ¾ cup milk
- 4 Tbsp butter, melted
Instructions
- Prepare the stew base: Heat olive oil in a large pot over medium heat. Add onion, carrots, celery, and garlic. Sauté until softened, about 5–7 minutes.
- Season and simmer: Stir in salt, pepper, onion powder, turmeric, and chicken base. Add chicken broth, water, and bay leaf. Bring to a simmer.
- Add chicken and peas: Stir in cooked chicken and frozen peas. Simmer gently.
- Make the thickener: In a small bowl, combine softened butter and flour to form a paste (beurre manié). Whisk into the stew to thicken. Remove bay leaf.
- Add cream: Stir in heavy whipping cream and heat through without boiling.
- Prepare dumplings: In a bowl, mix flour, baking powder, and salt. Stir in milk and melted butter until just combined.
- Cook dumplings: Drop spoonfuls of dumpling batter onto the simmering stew. Cover and cook for 15 minutes without lifting the lid, until dumplings are puffed and cooked through.
- Serve: Ladle into bowls and enjoy warm with extra pepper or herbs if desired.
