  • 32 oz chicken broth or stock
  • 1 ½ cups water
  • 1 bay leaf
  • 3 cups cooked chicken (boneless skinless breast/thighs or rotisserie)
  • 1 cup heavy whipping cream
  • ¾ cup frozen peas

Thickener – Beurre Manié

  • 1 Tbsp butter, softened
  • 1 Tbsp all-purpose flour

Dumplings

  • 2 cups all-purpose flour
  • 1 Tbsp baking powder
  • 1 tsp kosher salt
  • ¾ cup milk
  • 4 Tbsp butter, melted

Instructions

  1. Prepare the stew base: Heat olive oil in a large pot over medium heat. Add onion, carrots, celery, and garlic. Sauté until softened, about 5–7 minutes.
  2. Season and simmer: Stir in salt, pepper, onion powder, turmeric, and chicken base. Add chicken broth, water, and bay leaf. Bring to a simmer.
  3. Add chicken and peas: Stir in cooked chicken and frozen peas. Simmer gently.
  4. Make the thickener: In a small bowl, combine softened butter and flour to form a paste (beurre manié). Whisk into the stew to thicken. Remove bay leaf.
  5. Add cream: Stir in heavy whipping cream and heat through without boiling.
  6. Prepare dumplings: In a bowl, mix flour, baking powder, and salt. Stir in milk and melted butter until just combined.
  7. Cook dumplings: Drop spoonfuls of dumpling batter onto the simmering stew. Cover and cook for 15 minutes without lifting the lid, until dumplings are puffed and cooked through.
  8. Serve: Ladle into bowls and enjoy warm with extra pepper or herbs if desired.
