This Creamy Chicken Enchilada Casserole is a quick and comforting dish packed with cheesy, creamy goodness! It’s an easy-to-make casserole that brings all the rich flavors of chicken enchiladas without the hassle of rolling tortillas. Perfect for busy weeknights!

Ingredients

    1. 3 cups cooked, shredded chicken (rotisserie works great!)
    2. 1 can (10.5 oz) cream of chicken soup
    3. 1 cup sour cream (or Greek yogurt for a lighter option)
    4. 1 can (10 oz) diced tomatoes with green chilies (like Rotel), drained
    5. 1 1/2 cups shredded Mexican blend cheese (divided)
    6. 1 teaspoon garlic powder
    7. 1 teaspoon onion powder
    8. 1 teaspoon cumin
    9. 1/2 teaspoon chili powder
    10. 1/2 teaspoon salt (adjust to taste)
    11. 1/4 teaspoon black pepper
    12. 10 small corn tortillas (cut into quarters)
    13. 1/2 cup chicken broth (optional, for extra moisture)

Toppings (optional):

    1. Chopped fresh cilantro
    2. Sliced jalapeños
    3. Diced avocado
    4. Salsa or hot sauce

Instructions

  • Preheat Oven: Preheat oven to 375°F (190°C) and grease a 9×13 baking dish.
  • Make the Creamy Mixture: In a large bowl, mix cream of chicken soup, sour cream, drained Rotel, 1 cup of shredded cheese, and seasonings (garlic powder, onion powder, cumin, chili powder, salt, and pepper). Stir in the shredded chicken until well combined.
  • Assemble the Casserole: Layer half of the tortilla pieces at the bottom of the greased baking dish. Spread half of the creamy chicken mixture over the tortillas. Repeat with another layer of tortillas and the remaining chicken mixture. If you want a softer casserole, drizzle 1/2 cup chicken broth over the layers before adding cheese. Sprinkle the remaining 1/2 cup shredded cheese evenly over the top.
  • Bake: Cover with foil and bake for 25 minutes. Remove foil and bake for another 10 minutes until bubbly and golden on top.
  • Serve & Enjoy: Let the casserole rest for 5-10 minutes before serving. Garnish with your favorite toppings and enjoy with a side of rice, beans, or a crisp salad!

Notes

  • For a lighter option, swap sour cream for Greek yogurt.
  • You can also use flour tortillas, but corn tortillas give a more authentic taste.
