Ingredients

- 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 (14-ounce) can diced tomatoes
- 1 (14-ounce) can coconut milk
- 1 cup chicken broth
- 1 tablespoon tomato paste
- 1 tablespoon sugar
- Fresh cilantro, chopped (for garnish)

Add Liquids and Simmer:
Pour in diced tomatoes (with their juices), coconut milk, chicken broth, and tomato paste. Stir to combine all ingredients thoroughly.
Bring the mixture to a gentle boil, then reduce heat to low and let it simmer uncovered for 20 minutes, allowing the sauce to thicken and the flavors to meld. -
Add Sugar and Final Simmer:
Stir in sugar and continue to simmer for an additional 5 minutes.
