  2. 1 large onion, chopped
  3. 3 cloves garlic, minced
  4. 1 tablespoon fresh ginger, grated
  5. 2 tablespoons curry powder
  6. 1 teaspoon ground turmeric
  7. 1 teaspoon ground cumin
  8. 1 teaspoon paprika
  9. 1 teaspoon salt
  10. 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
  11. 1 (14-ounce) can diced tomatoes
  12. 1 (14-ounce) can coconut milk
  13. 1 cup chicken broth
  14. 1 tablespoon tomato paste
  15. 1 tablespoon sugar
  16. Fresh cilantro, chopped (for garnish)

Instructions

  • Heat the Oil:
    Heat vegetable oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

  • Add Garlic and Ginger:
    Stir in minced garlic and grated ginger; cook for an additional minute until fragrant.

  • Toast the Spices:
    Add curry powder, turmeric, cumin, paprika, and salt to the skillet. Cook, stirring constantly, for 1-2 minutes to toast the spices and bring out their flavor.

  • Cook the Chicken:
    Add the chicken pieces to the skillet, stirring to coat them evenly with the spice mixture. Cook until the chicken is lightly browned on all sides, approximately 5-6 minutes.

  • Add Liquids and Simmer:
    Pour in diced tomatoes (with their juices), coconut milk, chicken broth, and tomato paste. Stir to combine all ingredients thoroughly.
    Bring the mixture to a gentle boil, then reduce heat to low and let it simmer uncovered for 20 minutes, allowing the sauce to thicken and the flavors to meld.

  • Add Sugar and Final Simmer:
    Stir in sugar and continue to simmer for an additional 5 minutes.

 

  • Garnish and Serve:
    Garnish with freshly chopped cilantro before serving.
