Description

A quick and creamy one-skillet pasta meal with tender chicken, gnocchi, sundried tomatoes, and spinach. Ready in under 30 minutes, it’s perfect for a cozy weeknight dinner


Ingredients

  1. 2 tablespoons olive oil (or sundried tomato oil from the can)

  2. 1 pound chicken breast, cut into ¾1 inch pieces

  3. 1 teaspoon Italian seasoning

  4. ½ teaspoon salt

  5. ¼ teaspoon ground black pepper

  6. 2 tablespoons butter

  7. 2 cloves garlic, minced

  8. 1 cup chicken stock

  9. 1 cup heavy cream

  10. 16 ounces gnocchi

  11. 1 teaspoon smoked paprika

  12. ⅓ cup sundried tomatoes, chopped

  13. ½ cup grated parmesan cheese

  14. 2 cups baby spinach leaves


Instructions

  1. Cook the chicken:
    In a 12-inch skillet, heat olive oil over medium-high heat. Add the chicken pieces and season with Italian seasoning, salt, and pepper. Cook for 4-5 minutes until the chicken reaches an internal temperature of 165°F (74°C). Remove the chicken and set aside.

  2. Make the sauce:
    In the same skillet, melt the butter and add garlic. Cook for 30 seconds until fragrant. Deglaze the pan with chicken stock, scraping up any browned bits.

  3. Add cream and gnocchi:
    Add the heavy cream and bring to a simmer. Stir in the gnocchi and cook for 5 minutes, allowing the sauce to reduce and the gnocchi to become tender.

  4. Combine:
    Lower the heat to medium-low, add smoked paprika, sundried tomatoes, and parmesan cheese. Stir to combine.

  5. Add spinach and chicken:
    Add spinach and stir until wilted (you can add a splash of water if the sauce is too thick). Then, add the cooked chicken back into the pan and stir everything together.

  6. Finish and serve:
    Remove from heat and serve immediately.


Notes

  • You can use fresh gnocchi or pre-packaged, but make sure to follow the specific cooking instructions if using pre-cooked gnocchi.

 

  • For an extra creamy touch, you can add a bit more parmesan or a dash of cream at the end.
