Ingredients

2 tablespoons olive oil (or sundried tomato oil from the can)

1 pound chicken breast, cut into ¾ – 1 inch pieces

1 teaspoon Italian seasoning

½ teaspoon salt

¼ teaspoon ground black pepper

2 tablespoons butter

2 cloves garlic, minced

1 cup chicken stock

1 cup heavy cream

16 ounces gnocchi

1 teaspoon smoked paprika

⅓ cup sundried tomatoes, chopped

½ cup grated parmesan cheese

2 cups baby spinach leaves
Instructions

Cook the chicken:
In a 12-inch skillet, heat olive oil over medium-high heat. Add the chicken pieces and season with Italian seasoning, salt, and pepper. Cook for 4-5 minutes until the chicken reaches an internal temperature of 165°F (74°C). Remove the chicken and set aside. -
Make the sauce:
In the same skillet, melt the butter and add garlic. Cook for 30 seconds until fragrant. Deglaze the pan with chicken stock, scraping up any browned bits. -
Add cream and gnocchi:
Add the heavy cream and bring to a simmer. Stir in the gnocchi and cook for 5 minutes, allowing the sauce to reduce and the gnocchi to become tender. -
Combine:
Lower the heat to medium-low, add smoked paprika, sundried tomatoes, and parmesan cheese. Stir to combine. -
Add spinach and chicken:
Add spinach and stir until wilted (you can add a splash of water if the sauce is too thick). Then, add the cooked chicken back into the pan and stir everything together. -
Finish and serve:
Remove from heat and serve immediately.

You can use fresh gnocchi or pre-packaged, but make sure to follow the specific cooking instructions if using pre-cooked gnocchi.
