- 1 large head cauliflower, cut into florets
- 2 tablespoons butter (or ghee for a richer taste)
- ¼ cup heavy cream (or milk for a lighter option)
- 2 tablespoons cream cheese (for extra creaminess)
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon salt (or to taste)
- ¼ teaspoon black pepper
- ¼ cup grated Parmesan cheese (optional, for extra richness)
- 1 tablespoon chopped fresh chives (for garnish)
Instructions
- Steam the Cauliflower
Bring a large pot of water to a boil. Add cauliflower florets and cook for 10-12 minutes, until very tender. Drain well and pat dry with a paper towel to remove excess moisture. - Blend Until Smooth
In a food processor or blender, combine cauliflower, butter, cream cheese, heavy cream, garlic powder, onion powder, salt, and black pepper. Blend until smooth and creamy. (For a chunkier texture, mash by hand using a potato masher.) - Adjust & Serve
Stir in Parmesan cheese if using, and blend again. Taste and adjust seasoning if needed. - Garnish & Enjoy
Transfer to a bowl, top with chopped chives, and serve warm. Enjoy as a side with steak, roasted chicken, or turkey!
