A smooth, buttery, and low-carb alternative to mashed potatoes—light, fluffy, and full of flavor! This creamy cauliflower mash is perfect for those looking for a healthier side dish without compromising on taste.

Ingredients

  1. 1 large head cauliflower, cut into florets
  2. 2 tablespoons butter (or ghee for a richer taste)
  3. ¼ cup heavy cream (or milk for a lighter option)
  4. 2 tablespoons cream cheese (for extra creaminess)
  5. ½ teaspoon garlic powder
  6. ½ teaspoon onion powder
  7. ½ teaspoon salt (or to taste)
  8. ¼ teaspoon black pepper
  9. ¼ cup grated Parmesan cheese (optional, for extra richness)
  10. 1 tablespoon chopped fresh chives (for garnish)

Instructions

  • Steam the Cauliflower
    Bring a large pot of water to a boil. Add cauliflower florets and cook for 10-12 minutes, until very tender. Drain well and pat dry with a paper towel to remove excess moisture.
  • Blend Until Smooth
    In a food processor or blender, combine cauliflower, butter, cream cheese, heavy cream, garlic powder, onion powder, salt, and black pepper. Blend until smooth and creamy. (For a chunkier texture, mash by hand using a potato masher.)
  • Adjust & Serve
    Stir in Parmesan cheese if using, and blend again. Taste and adjust seasoning if needed.
  • Garnish & Enjoy
    Transfer to a bowl, top with chopped chives, and serve warm. Enjoy as a side with steak, roasted chicken, or turkey!

Notes

  • For a lighter version, substitute the heavy cream with milk.
