Description
A spicy and creamy pasta dish combining tender chicken pieces, zesty buffalo sauce, and rich ranch dressing, all cooked together in a single skillet for a satisfying meal.
Ingredients
1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
8 oz pasta (penne, rotini, or any short pasta shape)
1 onion, chopped
1 red bell pepper, chopped
2 cloves garlic, minced
1 tbsp olive oil
4 cups chicken broth
1/2 cup buffalo wing sauce
1/2 cup ranch dressing
1 cup shredded cheddar cheese
1/4 cup green onions, chopped (for garnish)
Instructions
-
Cook the Chicken: In a large skillet, heat olive oil over medium-high heat. Add chicken pieces and cook until browned and fully cooked, about 6-8 minutes. Remove chicken and set aside.
-
Sauté the Vegetables: In the same skillet, add chopped onion and red bell pepper. Sauté until softened, about 5 minutes. Add minced garlic and cook for another minute until fragrant.
-
Cook the Pasta: Add pasta and chicken broth to the skillet. Stir well, bring to a boil, then reduce heat to low. Cover and simmer for 15-20 minutes, or until pasta is tender and most of the liquid is absorbed.
-
Prepare the Sauce: Stir in buffalo wing sauce, ranch dressing, and shredded cheddar cheese. Continue stirring until cheese is melted and sauce is creamy.
-
Combine and Serve: Return cooked chicken to the skillet. Stir to combine and heat through. Garnish with chopped green onions before serving.
Notes
-
Adjust the amount of buffalo wing sauce to suit your preferred spice level.
-
For a lighter version, consider using whole wheat pasta and reducing the amount of cheese.
