Description

Creamy Asparagus Ravioli with Sausage and Peas is a quick and delicious spring dish featuring tender asparagus, savory sausage, and a rich cream sauce, all served with cheese ravioli. Perfect for busy weeknights.


Ingredients

  • 18 ounces cheese ravioli (refrigerated)
  • 1 pound asparagus (ends trimmed and discarded, spears cut into large pieces)
  • ½ pound bulk Italian sausage
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup frozen peas
  • ½ teaspoon kosher salt
  • 6 grinds fresh black pepper
  • 3 sprigs fresh thyme (optional)
  • ⅓ cup Parmesan cheese, grated (plus more for topping)

Instructions

  1. Set a large pot of water to boil over high heat. Preheat a large skillet or Dutch oven over medium heat and brown the sausage until fully cooked, about 7-9 minutes.
  2. Meanwhile, when the water is boiling, add a pinch of salt and then add the ravioli and asparagus. Cook together for 3-5 minutes, depending on the ravioli’s package instructions. Before draining, reserve about 1 cup of the starchy cooking liquid.
  3. When the sausage is fully browned, stir in the garlic. Add the cream and let it simmer over low heat for about 5 minutes, stirring occasionally, until the cream thickens slightly.
  4. Add the frozen peas, salt, pepper, thyme leaves, half of the Parmesan cheese, and ½ cup of the reserved pasta water. Stir well and continue cooking over low heat.
  5. Add the drained ravioli and asparagus to the sauce, stirring to combine. If the sauce becomes too thick, add more of the reserved pasta water.
  6. Top with the remaining Parmesan cheese and garnish with extra thyme leaves. Serve warm.

Notes

  • For extra flavor, use fresh thyme instead of the optional sprigs.
  • If you prefer a spicier dish, you can add some crushed red pepper flakes to the sauce.
  • Feel free to swap frozen peas with fresh peas when in season.
  • If the cream thickens too much, simply add more pasta water to achieve the desired consistency.
