Ingredients

Scale
  1. 1 lb ground Italian sausage
  2. 1 onion, diced
  3. 3 cloves garlic, minced
  4. 4 cups chicken broth
  5. 1 1⁄2 lbs ground beef
  6. 3 cups heavy cream
  7. 12 lasagna noodles, broken into pieces
  8. 2 cups shredded mozzarella cheese
  9. 1/2 cup grated Parmesan cheese
  10. Salt and pepper to taste
  11. Fresh basil for garnish

Instructions

  • Cook the Meat and Veggies: In a large pot, cook the ground Italian sausage, ground beef, diced onion, and minced garlic over medium heat. Stir occasionally until the meat is browned and the onion is translucent. Drain any excess fat.
  • Add Broth and Simmer: Add the chicken broth to the pot and bring the mixture to a boil.
  • Cook the Noodles: Stir in the heavy cream and broken lasagna noodles. Reduce the heat and let the soup simmer for about 20 minutes, or until the noodles are fully cooked and tender.
  • Melt the Cheese: Stir in the shredded mozzarella and grated Parmesan cheese until fully melted and incorporated.
  • Season: Season with salt and pepper to taste.
  • Serve and Garnish: Serve the soup hot, garnished with fresh basil for extra flavor and a pop of color.

Notes

  • You can substitute ground turkey or chicken for the ground beef and sausage if you prefer a lighter version.
  • To make it a spicier version, add red pepper flakes or some diced jalapeños.
  • For extra creaminess, add more heavy cream to the soup to suit your preference.
  • This soup can be stored in the fridge for up to 3 days. Reheat in a pot over low heat, adding a little extra broth if needed.
