Description
A hearty and comforting turkey soup made with leftover turkey, fresh vegetables, and flavorful seasonings, served over pasta for a satisfying meal.

- 2 tbsp butter
- 1 small yellow onion, diced
- 2 ribs celery, diced
- 1 cup carrots, diced
- 3 cloves garlic, minced
- 1 tsp Worcestershire sauce
- 1 tsp hot sauce
- 8 cups chicken broth (or turkey broth/stock)
- 1 bay leaf
- 3 cups leftover turkey, diced or shredded
- 1 cup bowtie pasta (uncooked)
- 1 tsp dried basil
- 1 tsp dried oregano
- 1 tsp dried parsley
- 1 tsp mustard powder
- ¼ tsp ground sage
- ¼ tsp pepper
Instructions
- Melt butter in a large soup pot over medium heat. Add the onion, carrots, and celery. Cook for 5 minutes until softened.
- Add garlic, Worcestershire sauce, hot sauce, bay leaf, and seasonings. Stir to combine.
- Pour in the chicken broth and bring to a boil. Reduce heat to a simmer and add the diced turkey. Simmer uncovered for 15 minutes.
- Boil the pasta separately until al dente. Drain and place directly in serving bowls.
- Ladle the hot soup over the pasta and serve immediately.
Notes
- Don’t add pasta to the soup pot to prevent it from becoming mushy during storage.
- Optional: Add a Parmesan rind or turkey bones during simmering for more flavor.
- Customize with rice, potatoes, or different pasta shapes if desired.
