Description

A hearty and comforting turkey soup made with leftover turkey, fresh vegetables, and flavorful seasonings, served over pasta for a satisfying meal.


Ingredients

  • 2 tbsp butter
  • 1 small yellow onion, diced
  • 2 ribs celery, diced
  • 1 cup carrots, diced
  • 3 cloves garlic, minced
  • 1 tsp Worcestershire sauce
  • 1 tsp hot sauce
  • 8 cups chicken broth (or turkey broth/stock)
  • 1 bay leaf
  • 3 cups leftover turkey, diced or shredded
  • 1 cup bowtie pasta (uncooked)
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 tsp dried parsley
  • 1 tsp mustard powder
  • ¼ tsp ground sage
  • ¼ tsp pepper

Instructions

  1. Melt butter in a large soup pot over medium heat. Add the onion, carrots, and celery. Cook for 5 minutes until softened.
  2. Add garlic, Worcestershire sauce, hot sauce, bay leaf, and seasonings. Stir to combine.
  3. Pour in the chicken broth and bring to a boil. Reduce heat to a simmer and add the diced turkey. Simmer uncovered for 15 minutes.
  4. Boil the pasta separately until al dente. Drain and place directly in serving bowls.
  5. Ladle the hot soup over the pasta and serve immediately.

Notes

  • Don’t add pasta to the soup pot to prevent it from becoming mushy during storage.
  • Optional: Add a Parmesan rind or turkey bones during simmering for more flavor.
  • Customize with rice, potatoes, or different pasta shapes if desired.
