Description

A savory and satisfying Spinach Ricotta Brunch Bake featuring tender spinach, creamy ricotta, and melty mozzarella, perfect for a cozy brunch or light lunch.


Ingredients

  • 2 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 4 large eggs
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1/4 teaspoon nutmeg
  • 1/2 cup cherry tomatoes, halved
  • 1 tablespoon olive oil
  • 1/4 cup grated Parmesan cheese
  • Fresh basil for garnish

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a 9×9-inch baking dish.
  2. Heat olive oil in a large skillet over medium heat. Add chopped spinach and sauté for 2–3 minutes until wilted. Let cool slightly.
  3. In a large bowl, combine ricotta, mozzarella, eggs, milk, garlic powder, onion powder, salt, pepper, and nutmeg. Whisk until well combined.
  4. Fold the sautéed spinach into the cheese mixture. Gently stir in halved cherry tomatoes.
  5. Pour mixture into the prepared baking dish and spread evenly. Sprinkle grated Parmesan cheese on top.
  6. Bake for 30–35 minutes or until the top is golden and the center is set.
  7. Let cool for 5 minutes. Garnish with fresh basil and serve.

Notes

  • For added flavor, sauté onions with the spinach before combining.
