- 2 cups fresh spinach, chopped
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 4 large eggs
- 1/2 cup milk
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 1/4 teaspoon nutmeg
- 1/2 cup cherry tomatoes, halved
- 1 tablespoon olive oil
- 1/4 cup grated Parmesan cheese
- Fresh basil for garnish
Instructions
- Preheat the oven to 375°F (190°C) and lightly grease a 9×9-inch baking dish.
- Heat olive oil in a large skillet over medium heat. Add chopped spinach and sauté for 2–3 minutes until wilted. Let cool slightly.
- In a large bowl, combine ricotta, mozzarella, eggs, milk, garlic powder, onion powder, salt, pepper, and nutmeg. Whisk until well combined.
- Fold the sautéed spinach into the cheese mixture. Gently stir in halved cherry tomatoes.
- Pour mixture into the prepared baking dish and spread evenly. Sprinkle grated Parmesan cheese on top.
- Bake for 30–35 minutes or until the top is golden and the center is set.
- Let cool for 5 minutes. Garnish with fresh basil and serve.
Notes
- For added flavor, sauté onions with the spinach before combining.
- This dish can be made ahead and reheated.
- Great served with a side salad or toast.
