Ingredients

Scale
  • 1 onion, grated
  • 1 cup quick oats
  • ½ cup milk
  • 2 eggs
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • 2 tsp soy sauce (gluten-free if needed)
  • 2 lbs ground beef (preferably 80/20)
  • Ketchup or barbecue sauce for topping (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine grated onion, oats, milk, eggs, salt, pepper, soy sauce, and ground beef. Mix until just combined.
  3. Divide mixture into individual mini loaf pans or shape into mini loaves on a baking sheet.
  4. If desired, spread ketchup or barbecue sauce on top.
  5. Bake for 30–35 minutes, until cooked through.
  6. Let rest a few minutes before serving.

Notes

  • Don’t overmix the meat mixture to keep the meatloaves tender.
  • Substitute ground turkey or chicken for a leaner option.
  • Use a muffin tin to make meatloaf muffins for kids or meal prep.
  • Freeze extras individually for easy future meals.
