This hearty and comforting slow cooker chicken stew is packed with tender chicken, vegetables, and flavorful seasonings. A perfect meal for cozy nights!
Ingredients
- 2 lbs boneless, skinless chicken thighs
- 4 carrots, sliced
- 3 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup frozen peas
- 2 tbsp tomato paste
- 1 tbsp Worcestershire sauce
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions

Layer the Ingredients
Place chicken thighs at the bottom of the slow cooker.
Add carrots, potatoes, onion, and garlic on top. -
Prepare the Broth Mixture
In a bowl, mix chicken broth, tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper.
Pour the mixture over the ingredients in the slow cooker. -
Cook the Stew
Cover and cook on low for 6-8 hours or high for 3-4 hours, until the chicken is tender. -
Add the Peas
30 minutes before serving, stir in the frozen peas and let them heat through.

Shred the Chicken & Serve
Once cooked, shred the chicken with two forks and mix back into the stew.
Adjust seasoning if needed and garnish with fresh parsley.
Serve hot and enjoy!
Notes
- For a richer flavor, use homemade chicken broth if available.
- You can also add other vegetables like celery or parsnips to customize the stew.
- For a thicker stew, mash a portion of the potatoes before shredding the chicken.
