A hearty and comforting one-pot meal, Slow Cooker Hamburger Hash combines ground beef, potatoes, vegetables, and a creamy sauce, all slow-cooked to perfection for a satisfying, easy dinner.

- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 4–5 medium potatoes, diced (Yukon Gold or Russet)
- 1 cup frozen mixed vegetables (peas, carrots, corn)
- 1 can (10.5 oz) cream of mushroom soup
- 1 cup beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup shredded cheddar cheese (optional)
- Optional: chopped parsley for garnish
Instructions
- In a skillet over medium heat, brown the ground beef with chopped onion and garlic. Cook until beef is no longer pink and onions are softened. Drain excess fat.
- In the slow cooker, place a layer of diced potatoes on the bottom.
- Top with the browned beef mixture.
- Add the frozen mixed vegetables over the beef.
- In a bowl, whisk together cream of mushroom soup, beef broth, Worcestershire sauce, paprika, salt, and pepper.
- Pour the sauce mixture over the layers in the slow cooker and stir gently to combine.
- Cover and cook on low for 6–7 hours or high for 3–4 hours, until the potatoes are tender.
- Optional: In the last 30 minutes, sprinkle shredded cheddar cheese over the top and cover until melted.
- Spoon onto plates and garnish with chopped parsley, if desired.
Notes
- Use pre-cooked or leftover ground beef to save time.
- You can substitute cream of mushroom soup with cream of chicken for a different flavor.
- Great for meal prep and freezes well.
