Description

A hearty and comforting one-pot meal, Slow Cooker Hamburger Hash combines ground beef, potatoes, vegetables, and a creamy sauce, all slow-cooked to perfection for a satisfying, easy dinner.


Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 45 medium potatoes, diced (Yukon Gold or Russet)
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese (optional)
  • Optional: chopped parsley for garnish

Instructions

  1. In a skillet over medium heat, brown the ground beef with chopped onion and garlic. Cook until beef is no longer pink and onions are softened. Drain excess fat.
  2. In the slow cooker, place a layer of diced potatoes on the bottom.
  3. Top with the browned beef mixture.
  4. Add the frozen mixed vegetables over the beef.
  5. In a bowl, whisk together cream of mushroom soup, beef broth, Worcestershire sauce, paprika, salt, and pepper.
  6. Pour the sauce mixture over the layers in the slow cooker and stir gently to combine.
  7. Cover and cook on low for 6–7 hours or high for 3–4 hours, until the potatoes are tender.
  8. Optional: In the last 30 minutes, sprinkle shredded cheddar cheese over the top and cover until melted.
  9. Spoon onto plates and garnish with chopped parsley, if desired.

Notes

  • Use pre-cooked or leftover ground beef to save time.
  • You can substitute cream of mushroom soup with cream of chicken for a different flavor.
  • Great for meal prep and freezes well.
