Description

A creamy, cheesy, and savory classic green bean casserole made with fresh green beans, mushrooms, and a rich homemade sauce, topped with crispy fried onions.


Ingredients

  • 1 ½ lbs. fresh green beans, washed (can substitute frozen or canned)
  • ½ teaspoon baking soda
  • 2 chicken bouillon cubes
  • 1 cup chicken broth
  • 1 cup half and half
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon onion powder
  • ½ teaspoon dried parsley
  • ½ teaspoon mustard powder
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 8 oz. mushrooms, diced
  • Pinch of salt for cooking mushrooms
  • 3 cloves garlic, minced
  • 5 tablespoons butter, divided
  • 3 tablespoons flour
  • 3 tablespoons Parmesan cheese, grated
  • 2 ¼ cups cheddar cheese, shredded
  • 1 ½ cups crispy fried onions

Instructions

  1. Preheat oven to 375°F.
  2. Bring a large pot of water to a boil. Add baking soda and bouillon cubes.
  3. Boil green beans for 5 minutes. Drain, rinse with cold water, and dry.
  4. In a measuring cup, mix chicken broth, half and half, Worcestershire sauce, onion powder, parsley, mustard powder, salt, and pepper. Set aside.
  5. Dice mushrooms and cut green beans into halves or thirds.
  6. In the same pot, melt 3 tablespoons butter over medium heat. Add mushrooms, garlic, and a pinch of salt. Cook 4-5 minutes, stirring frequently.
  7. Add remaining butter and flour. Cook for 2 minutes, stirring constantly.
  8. Slowly add the broth mixture, stirring continuously. Bring to a boil, reduce to simmer, and cook for 4-5 minutes until thickened.
  9. Remove from heat. Stir in green beans, Parmesan, half the cheddar cheese, and half the fried onions.
  10. Transfer to a greased 9×13-inch baking dish. Top with remaining cheddar and fried onions.
  11. Bake uncovered for 20 minutes, until bubbly and golden on top.
  12. Serve and enjoy.

Notes

  • Use frozen or canned green beans if fresh are unavailable.
  • Let the sauce rest to thicken before baking.
  • Customize with different cheeses or add bacon for extra flavor.
