This comforting Chicken and Stuffing Casserole is the perfect weeknight dinner—hearty, creamy, and packed with classic flavors. Made with tender shredded chicken, savory stuffing, mixed vegetables, and a creamy base, it’s a family favorite that comes together fast.
Ingredients
4 cups cooked chicken, shredded
2 cups chicken broth
1 can (10.5 oz) cream of chicken soup
1 cup celery, chopped
1 cup onion, chopped
1 teaspoon garlic powder
1 teaspoon black pepper
1 teaspoon salt
1 package (6 oz) stuffing mix
1/2 cup butter, melted
1 cup frozen mixed vegetables (peas, carrots, corn)
Instructions
Preheat oven to 350°F (175°C).
In a large bowl, mix together shredded chicken, chicken broth, cream of chicken soup, celery, onion, garlic powder, black pepper, and salt.
In a separate bowl, combine stuffing mix and melted butter, stirring until the stuffing is fully coated.
Spread the chicken mixture evenly into a greased 9×13 inch baking dish.
Evenly sprinkle the frozen mixed vegetables over the chicken layer.
Top with the buttered stuffing mix, spreading it across the top.
Bake for 30–35 minutes, or until the casserole is bubbly and the stuffing is golden brown.
Serve hot.
Notes
Rotisserie chicken works great in this recipe for convenience.
You can prep this casserole in advance and refrigerate it until ready to bake.
Add a sprinkle of shredded cheddar or mozzarella cheese under the stuffing layer for a cheesy twist.
To make it extra hearty, stir cooked rice or pasta into the chicken mixture.
