Instructions

Heat the Olive Oil: In a large pot, heat olive oil over medium heat. Add onion, garlic, carrots, and celery. Sauté for 5 minutes, stirring occasionally, until vegetables begin to soften.

Add Rice and Broth: Stir in rice, chicken broth, thyme, and parsley. Bring the mixture to a boil.

Simmer: Reduce heat to low. Cover and simmer for 20-25 minutes (or longer for brown rice), stirring occasionally, until rice is tender.
