Description

This Cozy Chicken and Rice Soup is the ultimate comfort food for chilly days. Packed with tender chicken, hearty rice, and vegetables, it’s a warm, satisfying meal that’s easy to make.

  1. Main Ingredients:

    1. 2 tbsp olive oil

    2. 1 medium onion, diced

    3. 2 cloves garlic, minced

    4. 3 medium carrots, sliced

    5. 2 stalks celery, chopped

    6. 1 cup uncooked rice (white or brown)

    7. 8 cups chicken broth

    8. 2 cups cooked chicken, shredded

    9. 1 tsp dried thyme

    10. 1 tsp dried parsley

    11. Salt and pepper, to taste

    12. Fresh parsley for garnish (optional)


Instructions

  • Heat the Olive Oil: In a large pot, heat olive oil over medium heat. Add onion, garlic, carrots, and celery. Sauté for 5 minutes, stirring occasionally, until vegetables begin to soften.

  • Add Rice and Broth: Stir in rice, chicken broth, thyme, and parsley. Bring the mixture to a boil.

  • Simmer: Reduce heat to low. Cover and simmer for 20-25 minutes (or longer for brown rice), stirring occasionally, until rice is tender.

  • Add Chicken: Stir in shredded cooked chicken. Simmer for another 5 minutes until heated through.

 

  • Season and Serve: Season with salt and pepper to taste. Ladle into bowls and garnish with fresh parsley, if using.


Notes

  • You can use any type of rice, but brown rice will require a longer cooking time.

  • For extra richness, you can add a splash of heavy cream or milk to the soup.

  • This soup can be stored in the refrigerator for up to 3 days and reheated easily.

 

  • If you prefer a thicker soup, you can mash some of the cooked vegetables with a spoon before serving.
