Instructions
- Cream the butter and sugars: In the bowl of a stand mixer, cream the butter, granulated sugar, and brown sugar on medium speed for about 2 minutes.
- Add eggs and flavorings: Add eggs, vanilla, and lemon juice. Blend on low speed for 30 seconds, then increase to medium speed and mix for about 2 minutes, until the mixture is light and fluffy. Scrape down the sides as needed.
- Mix in dry ingredients: With the mixer on low, add flour, oats, baking soda, salt, and cinnamon. Mix for about 45 seconds—do not overmix.
- Stir in chocolate and walnuts: Remove the bowl from the mixer and stir in the chocolate chips and walnuts by hand until evenly combined.
- Portion the dough: Scoop dough (about 3 tablespoons each) onto parchment-lined baking sheets, spacing about 2 inches apart.
- Bake: Preheat oven to 300°F (150°C). Bake cookies for 20 to 23 minutes, or until edges are golden brown and centers are still soft.
- Cool: Let cookies cool on the baking sheet for about 1 hour to finish setting.
