Get ready for a hearty, comforting, and family-friendly meal with this Cowboy Meatloaf & Potato Casserole! A delicious combination of savory meatloaf and creamy, cheesy potatoes, this one-pan dinner is the ultimate comfort food. Perfect for busy nights, it’s easy to prepare and packed with flavor.

  1. For the Meatloaf:

    • 1.5 lbs ground beef
    • 1 cup breadcrumbs
    • 1 egg, beaten
    • ½ cup milk
    • ½ onion, finely chopped
    • 2 cloves garlic, minced
    • 1 tsp salt
    • ½ tsp black pepper
    • ½ cup ketchup (plus extra for topping)
    • 1 tbsp Worcestershire sauce

    For the Potato Casserole:

    1. 2 lbs potatoes, peeled and sliced
    2. 1 onion, sliced
    3. 2 cups shredded cheddar cheese
    4. 1 can (10.75 oz) condensed cream of mushroom soup
    5. ½ cup milk
    6. Salt and pepper to taste
    7. 2 tbsp butter, melted

Instructions

  • Prepare the Meatloaf Mixture:
    In a large bowl, combine ground beef, breadcrumbs, egg, milk, chopped onion, minced garlic, salt, pepper, ketchup, and Worcestershire sauce. Mix well and shape into a loaf.

  • Prepare the Potato Casserole:
    In a separate bowl, mix sliced potatoes, sliced onion, half of the shredded cheddar cheese, cream of mushroom soup, milk, salt, and pepper.

  • Assemble the Casserole:
    Preheat oven to 375°F (190°C).
    In a 9×13 inch baking dish, spread the potato mixture evenly.
    Place the meatloaf on top of the potatoes.
    Top the meatloaf with extra ketchup.
    Sprinkle the remaining cheddar cheese over the potatoes.
    Drizzle the melted butter over the top.

  • Bake:
    Cover with foil and bake for 1 hour, or until the potatoes are tender and the meatloaf is cooked through.
    Remove foil for the last 15 minutes to brown the cheese.

 

  • Cool & Serve:
    Let it cool slightly before serving.

Notes

  • You can use ground turkey or chicken instead of beef for a lighter version of the meatloaf.
