These Cowboy Cookies are a chewy, hearty treat packed with chocolate chips, walnuts, and oats. Perfect for a sweet snack or a crowd-pleasing dessert!

- 1 cup butter, softened
- 1 cup sugar
- 1 cup packed brown sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp baking powder
- 2 cups all-purpose flour
- 2 cups old-fashioned rolled oats
- 2 cups chocolate chips
- Walnuts to taste (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the butter, sugar, and brown sugar.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the vanilla, baking soda, salt, baking powder, and flour until combined.
- Add the oats, chocolate chips, and walnuts (if using) and mix until everything is evenly incorporated.
- Drop spoonfuls of dough onto an ungreased cookie sheet, spacing them about 2 inches apart.
- Bake in the preheated oven for 12-15 minutes or until the edges are golden and the cookies are set.
- Remove from the oven and let cool on the sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- You can swap walnuts for pecans or leave them out entirely for a nut-free version.
- If you prefer a chewier cookie, bake on the shorter end of the time range.
