These Cowboy Cookies are a chewy, hearty treat packed with chocolate chips, walnuts, and oats. Perfect for a sweet snack or a crowd-pleasing dessert!

Ingredients

  1. 1 cup butter, softened
  2. 1 cup sugar
  3. 1 cup packed brown sugar
  4. 2 eggs
  5. 1 tsp vanilla extract
  6. 1 tsp baking soda
  7. 1/2 tsp salt
  8. 1/2 tsp baking powder
  9. 2 cups all-purpose flour
  10. 2 cups old-fashioned rolled oats
  11. 2 cups chocolate chips
  12. Walnuts to taste (optional)

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, cream together the butter, sugar, and brown sugar.
  • Add the eggs one at a time, mixing well after each addition.
  • Stir in the vanilla, baking soda, salt, baking powder, and flour until combined.
  • Add the oats, chocolate chips, and walnuts (if using) and mix until everything is evenly incorporated.
  • Drop spoonfuls of dough onto an ungreased cookie sheet, spacing them about 2 inches apart.
  • Bake in the preheated oven for 12-15 minutes or until the edges are golden and the cookies are set.
  • Remove from the oven and let cool on the sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • You can swap walnuts for pecans or leave them out entirely for a nut-free version.
  • If you prefer a chewier cookie, bake on the shorter end of the time range.
