Instructions

  • In a skillet over medium heat, cook the ground beef with chopped onion and minced garlic until browned and the onions soften. Drain any excess fat.
  • Transfer the beef mixture to a slow cooker. Add the cream of mushroom soup, milk, kidney beans, diced tomatoes with green chilies, corn, chili powder, salt, and pepper. Stir to combine.
  • Add the sliced potatoes, ensuring they’re evenly coated with the beef and bean mixture.
  • Cover and cook on low for 6–7 hours or on high for 3–4 hours, depending on your time.
  • In the last 20 minutes of cooking, sprinkle the shredded cheese over the top and let it melt before serving.

Notes

  • You can substitute the kidney beans with black beans or pinto beans for a different flavor.
  • If you don’t have a slow cooker, you can also bake the casserole in the oven at 375°F for about 45 minutes, adding the cheese in the last 10 minutes.
  • You can use any cheese you like, but cheddar melts beautifully and complements the flavors well.
