Instructions

Notes
You can substitute the kidney beans with black beans or pinto beans for a different flavor.
If you don’t have a slow cooker, you can also bake the casserole in the oven at 375°F for about 45 minutes, adding the cheese in the last 10 minutes.
You can use any cheese you like, but cheddar melts beautifully and complements the flavors well.
