Description

This Cottage Cheese Peanut Butter Mousse is a creamy, indulgent treat that’s rich in protein and full of flavor. Perfect for a healthy dessert or snack, it’s easy to make and customizable!


Ingredients

    1. 1 cup full-fat cottage cheese (for the creamiest texture)

    2. ¼ cup natural peanut butter (no sugar added)

    3. 2 tbsp sweetener (maple syrup, or a sugar-free alternative like allulose or Monk fruit)

    4. 1 tsp vanilla extract

    5. ¼ tsp salt (optional)

    6. 12 tbsp milk or heavy cream (if needed)

Optional Toppings:

    1. 2 oz dark chocolate chips

    2. 1 tsp coconut oil

    3. Chopped peanuts for garnish


Instructions

  1. Blend the Mousse: Add the cottage cheese, peanut butter, sweetener, vanilla extract, and salt (if using) to a high-speed blender or food processor. Blend for 30–60 seconds until completely smooth and creamy.

  2. Adjust the Consistency: If the mousse is too thick, add 1–2 tablespoons of milk or heavy cream and blend again until your desired texture is reached.

  3. Chill: Transfer the mousse to a bowl and refrigerate for 15–20 minutes to help it firm up and allow the flavors to develop.

  4. Prepare the Topping: In a small bowl, melt the dark chocolate chips and coconut oil together in the microwave in 20-second bursts, stirring in between, until smooth.

  5. Assemble and Serve: Divide the mousse into serving bowls or jars. Drizzle with the melted chocolate mixture and sprinkle with chopped peanuts. Serve immediately or store in the fridge until ready to enjoy.


Notes

  • For a dairy-free option, use a non-dairy cottage cheese alternative.
