Description
Indulge in this creamy, high-protein Cottage Cheese Ice Cream! It’s a healthier alternative to traditional ice cream, made with blended cottage cheese for a smooth and rich texture. Perfect for satisfying your sweet tooth while staying on track with your health goals
Ingredients
Scale
- 2 cups full-fat cottage cheese
- 1/3 cup liquid sweetener (sugar-free honey or agave syrup)
- 2 tablespoons peanut butter (or almond or cashew butter)
- 1 teaspoon vanilla extract (optional)
- 2 tablespoons chocolate chips (optional)
Instructions
- Place the cottage cheese in a blender and blend on high speed for 1–2 minutes until smooth and creamy.
- Add the liquid sweetener and peanut butter to the blended cottage cheese. If using vanilla extract, add it now. Blend again on medium speed until well combined.
- Gently stir in the chocolate chips using a spatula.
- Transfer the mixture into a freezer-safe container, smoothing the top with a spatula. Cover the container to prevent ice crystals from forming.
- Place the container in the freezer and freeze for at least 3–4 hours.
- Before serving, remove the ice cream from the freezer and let it sit at room temperature for about 15–20 minutes to soften.
Notes
- For a smoother texture, blend the cottage cheese until it’s completely creamy before adding other ingredients.
- You can substitute the peanut butter with almond or cashew butter if preferred.
- Feel free to get creative with mix-ins like fruit, nuts, or other chocolate options.
