1 cup cottage cheese
1/2 cup shredded cheddar cheese (or your favorite cheese)
1/4 cup diced bell peppers (any color)
1/4 cup spinach, chopped
1/4 teaspoon garlic powder

Instructions
Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a muffin tin with cooking spray or olive oil.
Mix the Ingredients: In a large bowl, whisk together the eggs and cottage cheese until well combined. Stir in the shredded cheese, diced bell peppers, chopped spinach, garlic powder, salt, and pepper.
