Ingredients

Scale
  1. 6 large eggs
  2. 1 cup cottage cheese
  3. 1/2 cup shredded cheddar cheese (or your favorite cheese)
  4. 1/4 cup diced bell peppers (any color)
  5. 1/4 cup spinach, chopped
  6. 1/4 teaspoon garlic powder
  7. Salt and pepper to taste

Instructions

  • Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a muffin tin with cooking spray or olive oil.
  • Mix the Ingredients: In a large bowl, whisk together the eggs and cottage cheese until well combined. Stir in the shredded cheese, diced bell peppers, chopped spinach, garlic powder, salt, and pepper.
  • Fill the Muffin Tin: Pour the egg mixture evenly into the prepared muffin tin, filling each cup about three-quarters full.
  • Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the egg bites are set and slightly golden on top.
  • Cool and Serve: Allow the egg bites to cool for a few minutes before removing them from the tin. Serve warm or at room temperature. These are great for breakfast on the go or a protein-packed snack!

Notes

  • You can customize the veggies and cheese in this recipe based on your preferences. Try adding mushrooms, onions, or other types of cheese.
  • For a low-carb version, use spinach, kale, or other leafy greens instead of bell peppers.
