- Cooking spray or olive oil (for greasing)
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a muffin tin with cooking spray or olive oil.
- Mix the Ingredients: In a large bowl, whisk together the eggs and cottage cheese until well combined. Stir in the shredded cheese, diced bell peppers, chopped spinach, garlic powder, salt, and pepper.
- Fill the Muffin Tin: Pour the egg mixture evenly into the prepared muffin tin, filling each cup about three-quarters full.
- Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the egg bites are set and slightly golden on top.
- Cool and Serve: Allow the egg bites to cool for a few minutes before removing them from the tin. Serve warm or at room temperature. These are great for breakfast on the go or a protein-packed snack!
