- 2 large eggs

- 1 teaspoon baking powder

- 1 cup fresh or frozen blueberries
- 1/4 cup chopped nuts (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish with a little oil or cooking spray.
- In a large bowl, combine the cottage cheese, eggs, honey (or maple syrup), and vanilla extract. Stir until well mixed.
- Add the rolled oats, baking powder, and cinnamon to the bowl. Mix everything together until combined.
- Gently fold in the blueberries and nuts if you’re using them. Be careful not to mash the blueberries.
- Pour the mixture into the prepared baking dish and spread it out evenly.
- Bake for 30-35 minutes, or until the top is golden and set. You can check doneness by inserting a toothpick in the center; it should come out clean.
