2 large eggs
1/4 cup honey or maple syrup
1 teaspoon vanilla extract
1 cup rolled oats
1 teaspoon baking powder
1/2 teaspoon cinnamon
1 cup fresh or frozen blueberries
1/4 cup chopped nuts (optional)
Instructions
Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish with a little oil or cooking spray.
In a large bowl, combine the cottage cheese, eggs, honey (or maple syrup), and vanilla extract. Stir until well mixed.
Add the rolled oats, baking powder, and cinnamon to the bowl. Mix everything together until combined.
Gently fold in the blueberries and nuts if you’re using them. Be careful not to mash the blueberries.
Pour the mixture into the prepared baking dish and spread it out evenly.
Bake for 30-35 minutes, or until the top is golden and set. You can check doneness by inserting a toothpick in the center; it should come out clean.
