Description

This Cottage Cheese Banana Bread is a moist, protein-packed treat with the perfect balance of sweetness and flavor. With ripe bananas, almond flour, and a hint of cinnamon, this bread is the ideal choice for breakfast or a snack


Ingredients

2 ripe bananas, mashed
3 large eggs
1/2 cup cottage cheese
3 tablespoons maple syrup (adjust to taste)
2 teaspoons vanilla extract
2 1/2 cups almond flour
1 teaspoon baking soda
2 teaspoons ground cinnamon
Optional mix-ins: walnuts, chocolate chips, or blueberries


Instructions

  • Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line it with parchment paper for easy removal.

  • Prepare the Batter: In a large bowl, mix together the mashed bananas, eggs, cottage cheese, maple syrup, and vanilla extract until smooth.

  • Combine Dry Ingredients: In a separate bowl, whisk together the almond flour, baking soda, and ground cinnamon.

  • Combine Mixtures: Gradually add the dry ingredients to the wet ingredients, stirring until just combined. If desired, fold in optional mix-ins like walnuts, chocolate chips, or blueberries.

  • Bake: Pour the batter into the prepared loaf pan and smooth the top. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

 

  • Cool and Serve: Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely. Slice and enjoy!


Notes

  • You can substitute honey or agave syrup for the maple syrup for a different sweetness.

  • For a nut-free version, simply omit the optional mix-ins.

  • Store leftovers in an airtight container at room temperature for up to 3 days, or refrigerate for longer freshness.

 

  • This bread also freezes well for up to 3 months.
