For the Æbleskiver:

  • 140 g (1 cup) all-purpose flour
  • 70 g (½ cup) medium grind cornmeal
  • 150 g (¾ cup) sugar
  • 1 tbsp baking powder
  • ½ tsp salt
  • 1 cup buttermilk
  • 2 large eggs
  • 160 g (1 cup) fresh corn
  • 30 g (⅓ cup) finely chopped chives
  • 3+ tbsp melted butter (for the pan)

Instructions

  1. In a large bowl, whisk together the flour, cornmeal, sugar, baking powder, and salt.
  2. In a separate bowl, beat the eggs and then mix in the buttermilk.
  3. Gently combine the wet ingredients with the dry until just blended—do not overmix.
  4. Fold in the fresh corn and chopped chives until evenly distributed.
  5. Preheat an æbleskiver pan over medium heat and brush each cavity generously with melted butter.
  6. Spoon the batter into each cavity, filling them about halfway full.
  7. Cook until the edges begin to set and bubbles form at the surface (about 1–2 minutes), then use a skewer or fork to gently flip each æbleskiver and cook the other side until golden brown and puffed.
  8. Continue cooking and turning in batches until all the batter is used.
  9. Serve warm with honey butter, hot sauce, sour cream, or your favorite toppings!

Notes

  • If your corn is particularly juicy, drain slightly to prevent excess moisture in the batter.
  • Chives can be swapped for scallions or finely minced jalapeños for a kick.
  • To keep cooked æbleskiver warm while cooking the rest, place them on a baking sheet in a 200°F (95°C) oven.
  • Leftovers can be stored in the fridge and reheated in the oven or air fryer.
  • Perfect for brunch, snacks, or as a playful appetizer!
