For the Æbleskiver:
- 140 g (1 cup) all-purpose flour
- 70 g (½ cup) medium grind cornmeal
- 150 g (¾ cup) sugar
- 1 tbsp baking powder
- ½ tsp salt
- 1 cup buttermilk
- 2 large eggs
- 160 g (1 cup) fresh corn
- 30 g (⅓ cup) finely chopped chives
- 3+ tbsp melted butter (for the pan)
Instructions
- In a large bowl, whisk together the flour, cornmeal, sugar, baking powder, and salt.
- In a separate bowl, beat the eggs and then mix in the buttermilk.
- Gently combine the wet ingredients with the dry until just blended—do not overmix.
- Fold in the fresh corn and chopped chives until evenly distributed.
- Preheat an æbleskiver pan over medium heat and brush each cavity generously with melted butter.
- Spoon the batter into each cavity, filling them about halfway full.
- Cook until the edges begin to set and bubbles form at the surface (about 1–2 minutes), then use a skewer or fork to gently flip each æbleskiver and cook the other side until golden brown and puffed.
- Continue cooking and turning in batches until all the batter is used.
- Serve warm with honey butter, hot sauce, sour cream, or your favorite toppings!
Notes
- If your corn is particularly juicy, drain slightly to prevent excess moisture in the batter.
- Chives can be swapped for scallions or finely minced jalapeños for a kick.
- To keep cooked æbleskiver warm while cooking the rest, place them on a baking sheet in a 200°F (95°C) oven.
- Leftovers can be stored in the fridge and reheated in the oven or air fryer.
