  1. 1 (15 oz) can whole kernel corn, drained
  2. 1 (15 oz) can cream-style corn
  3. 1 cup sour cream
  4. ½ cup unsalted butter, melted
  5. 2 large eggs, beaten
  6. 1 (8.5 oz) box Jiffy corn muffin mix
  7. ¼ cup granulated sugar (optional, for a sweeter version)
  8. ½ tsp salt
  9. ½ cup shredded cheddar cheese (optional)

Instructions

  • Preheat & Prep: Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  • Mix the Batter: In a large bowl, whisk together the eggs, sour cream, melted butter, and sugar (if using). Stir in the whole corn, creamed corn, Jiffy mix, salt, and cheddar cheese (if using). Mix until well combined.
  • Bake the Casserole: Pour the batter into the prepared baking dish and spread evenly. Bake for 40-50 minutes, or until golden brown and the center is set. A toothpick inserted should come out clean.
  • Serve & Enjoy: Let the casserole cool for 5 minutes before serving. Serve warm as a side dish with turkey, ham, BBQ, or any comfort meal!

Notes

  • For extra flavor, you can add diced onions or bell peppers.
