Ingredients

  • 2 cups all-purpose flour
  • 1 tsp salt
  • 1 tbsp granulated sugar
  • 2½ tsp baking powder
  • 2 medium eggs, beaten
  • ¾ cup milk
  • ¼ cup heavy cream (or substitute with additional milk)
  • 2 tbsp melted butter or shortening
  • 2 cans (15 oz each) sweet corn kernels, rinsed and drained
  • Vegetable oil, for frying

Instructions

Mix dry ingredients:

  1. In a large bowl, whisk together the flour, salt, sugar, and baking powder.

Combine wet ingredients:

  1. In a separate bowl, whisk together the eggs, milk, heavy cream, and melted butter.
  2. Pour into the dry ingredients and stir until just combined.
  3. Gently fold in the corn kernels.

Chill the batter:

  1. Cover and refrigerate the batter for 1 hour to firm up.

Fry the nuggets:

  1. Heat oil in a deep fryer or heavy pot to 360°F (182°C).
  2. Drop spoonfuls of chilled batter into the hot oil using a scoop or spoon.
  3. Fry in batches, turning occasionally, until golden brown—about 3–4 minutes per batch.

Drain and serve:

  1. Remove nuggets with a slotted spoon and transfer to a paper towel-lined plate.
  2. Serve warm with your favorite dipping sauce.
