This easy and delicious Corn Casserole is the perfect side dish for any meal! With a rich, creamy texture, this casserole is made with corn, sour cream, and Jiffy cornbread mix. Topped with melty cheddar cheese, it’s sure to be a crowd favorite at dinner or during the holidays!

Ingredients

  1. 1 can of corn (drained)
  2. 1 can of cream-style corn
  3. 8 oz sour cream
  4. 1 box of Jiffy cornbread mix
  5. 1/2 stick of butter (melted)
  6. Cheddar cheese (as much as you like, for topping)

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine the drained corn, cream-style corn, sour cream, Jiffy cornbread mix, and melted butter. Mix well until everything is combined.
  • Pour the mixture into a greased casserole dish.
  • Bake for 45 minutes, or until the top is golden brown.
  • Remove from the oven and sprinkle cheddar cheese on top.
  • Return to the oven and bake until the cheese is melted and bubbly.
  • Serve warm and enjoy!

Notes

  • You can adjust the amount of cheese depending on your preference. Feel free to add as much as you like for extra cheesy goodness!
