  • 2 tablespoons olive oil
  • 2 tablespoons honey or agave nectar
  • 1/4 teaspoon cumin
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon kosher salt

For Assembly:

  • 4 cups shredded green cabbage
  • 1 large carrot, coarsely grated or julienned
  • 4 flatbreads (pita, naan, lavash, or flour tortillas)
  • 1/4 cup fresh leafy herbs (optional, such as dill, parsley, or cilantro)

Instructions

  1. Make the Peppercorn Sauce: In a small bowl, whisk together mayonnaise, apple cider vinegar, honey (or agave), black pepper, salt, garlic powder, onion powder, and cayenne pepper until smooth. Set aside.
  2. Prepare the Slaw Dressing: In another bowl, whisk together apple cider vinegar, olive oil, honey (or agave), cumin, chili powder, and salt.
  3. Mix the Slaw: In a large bowl, combine shredded cabbage and grated carrot. Pour the slaw dressing over the vegetables and toss to coat evenly.
  4. Warm the Flatbreads: Heat your flatbreads on a dry skillet or in the oven until soft and pliable.
  5. Assemble the Wraps: Spread a generous spoonful of peppercorn sauce on each flatbread. Top with a handful of dressed slaw and a sprinkle of fresh herbs, if using. Roll up and serve immediately.
