Description

Ingredients

  1. For the Dressing:

    • 1/4 cup olive oil
    • 3 tablespoons mayo
    • 2 tablespoons red wine vinegar
    • 1/2 lemon, juiced
    • 1 1/2 teaspoons sugar
    • 1/4 cup Parmesan cheese, finely grated
    • 1 garlic clove
    • 1/2 teaspoon Italian seasoning
    • Kosher salt and black pepper, to taste

    For the Salad:

    1. 5 oz mixed greens
    2. 3/4 cup black olives, pitted and halved
    3. 3/4 cup pepperoncini peppers, sliced
    4. 1/2 cup red onion, thinly sliced
    5. 2 Roma tomatoes, cut into wedges
    6. 1 1/2 cups seasoned croutons
    7. 1/3 cup shaved Parmesan cheese

Instructions

  • Prepare the Dressing:
    In a blender or food processor, combine olive oil, mayo, red wine vinegar, lemon juice, sugar, Parmesan, garlic, and Italian seasoning. Blend until smooth.
    Season with salt and black pepper to taste.
    Refrigerate for at least 1 hour for flavors to meld.

 

  • Assemble the Salad:
    In a large bowl, toss the mixed greens, olives, pepperoncini, red onion, tomatoes, and croutons.
    Drizzle with the prepared dressing and toss to coat.
    Garnish with shaved Parmesan and serve immediately


Notes

  • If you prefer a more tangy flavor, feel free to add more red wine vinegar or lemon juice to the dressing.

 

  • For an extra boost of flavor, you can add a few extra sprinkles of Parmesan cheese on top when serving.
