Ingredients

Scale
  1. For the Chicken:

    • 4 boneless, skinless chicken breasts (pounded to an even thickness)
    • Salt and pepper (to season)

    For the Breading:

    • 1 cup grated parmesan cheese (freshly grated for maximum flavor)
    • 1 cup panko breadcrumbs
    • 1/2 cup all-purpose flour
    • 2 large eggs (beaten)
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • 1 teaspoon paprika (optional)
    • 1/2 teaspoon dried parsley (or fresh parsley for garnish)

    For Cooking:

    1. Olive oil or butter (for pan-frying)
    2. Cooking spray (if baking)

Instructions

  1. Prepare the Chicken:
Season both sides of the chicken breasts with salt and pepper. Pound the chicken to an even thickness using a meat mallet or rolling pin if necessary, to ensure even cooking.

  2. Set Up Your Breading Station:
Create three shallow bowls for the breading process:

    • Bowl 1: Place flour.
    • Bowl 2: Beat the eggs.
    • Bowl 3: Combine panko breadcrumbs, grated parmesan, garlic powder, onion powder, paprika (optional), and dried parsley. Mix well.
  3. Bread the Chicken:

    • Dredge each chicken breast in the flour, shaking off excess.
    • Dip into the beaten eggs, ensuring it’s fully coated.
    • Press into the breadcrumb mixture, making sure to coat both sides evenly.
  4. Cook the Chicken:

    • Pan-fry: Heat olive oil or butter in a skillet over medium heat. Cook the breaded chicken breasts for 3-4 minutes on each side, or until golden brown and cooked through.
    • Bake (optional): Preheat oven to 400°F (200°C). Spray a baking sheet with cooking spray, place the breaded chicken on the sheet, and bake for 20-25 minutes, flipping halfway through, until golden brown.

Notes

  • If you prefer a crispier texture, pan-frying works best, but baking is a great healthier option.
  • For extra flavor, use fresh parsley for garnish.
  • You can make the breadcrumb mixture in advance for easy meal prep.
